Course Description

This practical exam is administered by the Canadian Culinary Federation and is the final element for the Chef de Cuisine (CCC) certification. You will write, cost and prepare a six course menu for four covers from a provided ingredient list to set parameters.

You must complete all four CCC courses and the CCC written exam before taking the practical exam. Students are required to contact Chef Mikael Volke at 403.210.4230 before registering for the exam.

Please note:
To earn the Certified Chef de Cuisine designation, participants must first apply for and be accepted into the program though the Canadian Culinary Institute (CCI). To register in this course, you must be registered with the CCI and show proof of registration.

Section Notes

This day will be on Saturday, May 25 from 7am to 5pm. On this day students will execute their menu and have it evaluated by a panel of judges. Start times will be staggered so some students may start earlier or finish later than others.
